Retro Party Time!

One of the best things about the 70’s (besides scampi of course!) were the fun family times. Follow our top tips for a great night in with family and friends, complete with proper retro games.

The Essentials: Food and Drink Scampi Cocktail Serves 4 For the sauce:

  • Juice of half a lemon
  • tbsp Worcestershire sauce
  • 5 tbsp tomato ketchup
  • few drops Tabasco sauce
  • 2 pinches smoked paprika
  • 1/2 tsp paprika
  • 1 tbsp double cream
  • 4 tbsp mayonnaise
  • 1 pinch cayenne pepper
  • Iceberg Lettuce
  • Whitby Whole Scampi
  • Fresh Parsley or Dill to garnish

 

Method

Make the Marie Rose Sauce by mixing all the ingredients together.

Wash and then refresh iceberg lettuce in a bowl of cold water with ice cubes.

Cook Whitby Whole Scampi according to instructions on the back of the pack.

Meanwhile dry lettuce and arrange at the bottom of 4 martini glasses (or similar).

Dollop a generous amount of sauce on the lettuce and then just before serving divide the cooked scampi in 4 and place on top of the sauce.

Garnish with fresh herbs.

Best served warm .
