Lemon Pepper Flatbreads

Serves: 2 | Cooking Time: 20 minutes

A quick(ish), but incredibly delicious idea!

Preheat oven and cook goujons according to instructions on the back of  pack.  Meanwhile, scoop out and mash avocado flesh with lemon juice and zest. Spread one half of each flatbread with mashed avocado, place cooked goujons on top and dollop with mayonnaise. Garnish with parsley if desired.

Fold over and tuck in!

Ingredients:

  • Whitby Seafoods Lemon Pepper Goujons
  • 1 large avocado
  • juice and zest of 1 small lemon
  • 4 tbsp mayonnaise
  • 4 warmed flatbreads
  • small bunch fresh parsley  (optional)
