Cut the bread into crouton size pieces and shallow fry until crispy and golden – leave to cool
Cut the cos lettuce into small pieces and place into a bowl
Cut avocado into small pieces or slices and squeeze ½ lemon over to keep fresh and green (stops it going brown)
Cut the hard boiled eggs into ¼
Dress the leaves with the Caesar dressing
Place all ingredients equally between 2 bowls
Cook the scampi to the cooking instructions on pack and present as per picture as a guide
Sprinkle with baby capers or sprinkle with chopped parsley
